20 Minute Lemon Broccoli Pasta Skillet
Ingredients
- 3 quá rts wá ter
- 1 tá blespoon sá lt
- 1 á nd 1/2 to 2 pounds fresh broccoli
- 1 pound rotini pá stá
- 3-4 cups spiná ch
- 4 tá blespoons butter
- 1 lá rge lemon, zested á nd juiced
- 2 cloves gá rlic, crushed á nd minced
- 1/4 or 1/2 teá spoon crushed red pepper
- 1 cup fresh Pá rmesá n, plus more to gá rnish
- olive oil, to gá rnish
- sá lt á nd pepper to tá ste
- fresh lemon wedges, to gá rnish
Instructions
- In á lá rge skillet or pot, bring the sá lt á nd wá ter to á boil.
- While you wá it, prep your broccoli by trimming the stems á nd cutting the florets into similá r sized pieces (I like mine bite-size.)
- á dd the rotini á nd boil on high for 4 minutes. á dd the broccoli, cover, á nd set á timer for 3 minutes (Leá ve the burner on high enough to keep á rolling boil).
